The first fermentation stage is all about making still wine. After producing this, the wine undergoes blending and bottling stage before transitioning to the second fermentation period, where winemakers add the liqueur de tirage before capping and storing it. And as we all know, yeasts react with sugar, producing carbon dioxide. This gas is the reason why champagnes are fizzy.

    If you want to impress your friends with the completeness of your wine knowledge, you must know that there are not only 3 grapes that everyone knows and always talk about in Champagne.

    There are 7 grapes allowed in Champagne.

    Pinot Blanc is a white grape of the Pinot family that is often used for making sparkling wines in other regions like Alsace or Burgundy. Its permitted but rare in Champagne.

    The 3 other grapes, that are local to Champagne, are called Petit Meslier, Arbanne, and Fromenteau.

    If you want to try something completely different that is still called Champagne, you can find varietal wines made from those, such the Petit Meslier made by a producer called Duval-Leroy, or the Arbanne made by Moutard. Another is made by Serge et Olivier Horiot.

    One of my favorites of all Champagnes is one called the Cuvée des 6 Cépages by the Moutard Champagne house. It uses 6 of the 7 grapes to craft a rather unique characterful Champagne. A must-try if youre curious.

    A wines level of sweetness is determined by the level of dosage, which refers to the practice of adding a small amount of sweetened wine back into the bottle. This triggers the secondary fermentation, giving the sparkling wine its bubbles.

    While many Champagnes and sparkling wines have a high dosage, brut wine has very little of this sweetened wine added to it, keeping it dry and sharp.

    When shopping for sparkling wine, or Champagne, you can pick one to suit your taste by checking the wine label for these terms:

    • Brut Nature or Brut Zero: The driest of the dry, this brut is highly acidic and intense.
    • Extra Brut: Another term for extra dry, its not quite as dry as brut nature, but still highly acidic.
    • Brut: With anywhere between 0-12 grams of sugar per liter, brut is dry but slightly less mouth-watering than brut nature or extra brut.
